{Red Velvet Cake...Yum!}

Hope everyone is having a wonderful Labor Day!!

This is my idea of semi-homemade...this cake is super easy and super duper moist & yummy!!

Easy Red Velvet Cake

1 Box of butter recipe golden cake mix
1/2 cup margarine
4 eggs
1 tbsp. cocoa
1 tsp. baking soda
1 tsp. white vinegar
2 oz. red food coloring
2 oz. water
1/2 cup buttermilk

Mix all ingredients for 4 minutes.  Pour into two 8' pie pans and bake for 30-35 minutes at 325 degrees F.  Cool layers.  (You can choose to split your two layers at this point...I do not though.)  Frost with cream cheese frosting.  (You can buy this from the store....OR make your own, like ME!)

Cream Cheese Frosting

1 cup margarine
2 8oz. packages of cream cheese
1 tsp. vanilla
2 boxes of confectioners sugar

Mix margarine, sugar, cream cheese and vanilla.  Beat well.

& there you have it....easy, yummy, super moist, ALMOST homemade cake =)  ENJOY!!

{Dinner was YUM-O!!}








Soooooo glad that I received an email from Kraft Foods yesterday that contained this recipe.  This was soooo super yummy!!

Chicken Alfredo Pesto Pasta
prep time 10 min
total time 25 min
makes 4 servings, 1-1/2 cups each

What You Need
8 oz. (1/2 of 16-oz. pkg.) angel hair pasta, uncooked
2 tsp. Oil
1 lb. Boneless skinless chicken breasts, cut into bite-size pieces
2 cups Milk
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread
1 large Red pepper, cut into strips
1/4 cup KRAFT Grated Parmesan Cheese
2 Tbsp. Pesto

Make It
COOK pasta as directed on package. Meanwhile, heat oil in large nonstick skillet on medium heat. Add chicken; cook and stir 7 min. or until cooked through.

STIR in milk and cream cheese spread; cook 3 min. or until cream cheese spread is completely melted and mixture is well blended. Add peppers, Parmesan cheese and pesto; stir. Cook 3 min. or until heated through, stirring occasionally.

DRAIN pasta. Add to cream cheese mixture; toss to coat.
